The KLM menu is rotating again – this time with a new menu by Jonnie Boer. Also, the tableware is being updated.

What to look forward to aboard KLM World Business Class – Image, KLM
Jonnie Boer is a Dutch star Chef, with sommelier Thérèse Boer of restaurant De Librije, who has created the menu that will be offered aboard KLM’s World Business Class.
Previous collaboration with Jonnie and Thérèse Boer was much appreciated by KLM’s customers. KLM is looking forward to again offering Jonnie’s contemporary style and Thérèse’s expertise in wines and hospitality.
Starters
- Tartelette of apple, potatoes, and green asparagus
- A tasting of delicacies: grilled zucchini in a cream of tahini, chickpea salad, garlic feta, and nut salad
Main dishes
- A selection of delicacies: a traditional vegetarian stew with roasted bell peppers, compote of braised onion and tomato served with mashed potato
- Baked salmon with broccolini, roasted tomatoes and couscous
- Chicken thigh in a star anise gravy served with braised green cabbage and potato puree
These items will be on the menu until July 2022, when the menu will be rotated again. As is the current trend both Jonnie Boer’s and KLM will be using recognisable, fresh, local ingredients and balanced use of animal protein. The new menu will also feature various vegetarian options for those who needed them.
And for those who need a little wine, Jonnie Boer’s dishes will be accompanied by a range of exquisite wines, including Masi Tupungato – Passo Doble – 2019- Mendoz, Argentina (29 March – 10 April), and Domaine de Grangeneuve L’Initiale H – 2020 – Rhône – France (as from 10 April).
New tableware
It seems that KLM will be renewing its tableware in World Business Class. This tableware includes a sustainable tray and crockery, which are designed by Marcel Wanders. The chinaware is made from bone china, and the tray from polypropylene: lightweight, more robust, and recyclable materials
This will roll out in the second half of 2022.
More options in the air
Where sometimes airline business class seats can be same-y or a variant on another seat that’s been released, the softer elements of a service are where an airline gets a chance to shine.
The localised menus again look an interesting option for those flying in KLM’s World Business Class on local routes – and a chance for Dutch cuisine to shine.
It’s certainly something a little different to look forward to the air – and that’s always a welcome thing.
