With December coming around, it’s time for Swiss International Air Lines to rotate its meals in premium cabins.

This time SWISS has chosen to collaborate with the high-end After Seven restaurant in Zermatt, offering premium travellers on SWISS long-haul flights from Zurich will enjoy Chef Florian Neubauer’s creations featuring specialities of Canton Valais in the latest chapter of the ‘SWISS Taste of Switzerland’ inflight culinary programme.
Let us see what is being offered. As usual, these are for food that is loaded from Zurich Airport. Return menus have different options.
In First Class, we start with Lamb’s shoulder with jus, yoghurt and cucumber sauce with couscous with cauliflower, roasted carrot, baby leek, fried onions with pine nut
For those feeling a little more adventurous at 35,000ft, the airline is also offering roasted octopus with salsa verde with potato salad, baby fennel and garlic confit.
It’ll be interesting to see how it reacts to life in the air – and not turn into rubber.
For those preferring a plant-based option, there’s also Oven-roasted beetroot with brown rice and mustard sauce.
Heading down to business class, for starters, we have a marinated tuna with pickled white radish and wasabi mayonnaise
Moving on, there is got a Cod with tomato beurre blanc and basil oil, Red quinoa with dried tomatoes, salicornia.
For those who need a bit of spice in this cold season, there’s also a Vegetarian tikka masala with planted chicken
Basmati rice, roasted broccolini and Greek yoghurt.
For those who are looking forward to what’s being offered in SWISS Premium Economy, sadly, the airline didn’t supply any images. However, they are offering Premium Economy Class travellers on outbound flights from Switzerland the culinary option of a three-course meal featuring Canton Valais specialities.
These include Beef goulash, polenta and mixed vegetables with parsley, Chicken breast with red wine jus with Mashed potato and green beans or Noodles with vegetable-coconut sauce and carrots.

Swiss International Airlines does enjoy featuring the menus and tastes of the cantons of the country – as you can see from previous coverage on this blog.
However, such delights only last three months, before the menus are rotated again.
Also remember, these menu items are available out of the airlines’ Zurich hub, rather than at outstations – something to bear in mind if you are planning to travel with on SWISS in a premium cabin.
