Japan Airlines is playing with its menus again, with its “RED à table” dining concept, this time basing its meals on the theme of “In-flight Meals for the Future”.
Under the theme of “In-flight Meals for the Future,” JAL will begin offering the new “RED à table” menu in Premium Economy and Economy Class on medium- and long-haul international flights.
The new menu will be supervised by three outstanding chefs in Vietnamese, Italian, and Japanese cuisine who have previously excelled in “RED U-35,”, Japan’s largest chef competition to discover young talent for the new era.
As part of the “In-flight Meals for the Future,” the ” Future 50 Foods,” which was adopted for the a la carte menu of the in-flight meals for first class and business class on international long-haul flights from Japan, has been incorporated into “RED à table” as well.
In addition, from this menu, internationally certified paper products that consider forest resources will be introduced for containers and lids for main dishes and tray mats.
On to the menu.
For the Japanese option, there is a Yuzu-flavored Steamed Rice with Chicken & Lotus Root”.
This features lotus root – which is one of the “Future 50 Foods” – and the Vietnamese national flower, lotus, edamame, maitake, carrot, and ginkgo.
For the Western Main Dish, JAL is offering “Beef Stew with Carrot Rice & Omelet” combining beef and omelette – sure-fire crowd pleasers.
Edamame is used for texture, bell peppers for colour, and coconut oil for accents, adding a gorgeous appearance and depth of flavour. In addition, carrot rice is used so that children can enjoy eating vegetables.
Shibazuke pickles are added to cleanse the palate to give the dish a sour taste and texture.

Jacob says
I flew SFO-NRT round trip on JAL Premium Economy. The food was minimal and lousy. On the flight back to SFO for breakfast they served a bizzare concoction created by the Red A Menu team. It was some kind of parmesan sause that we had to pour into a box that contained a mixture of pene pasta and some vegetables. It tasted nasty and both my wife and daughter hated it. I did too. I said, the next time I fly JAL PE or Economy I will bring my own food to eat. Seriously, I will do it.
